1. Pound/blitz the ingredients for the spice combine along. Rub the chicken body with the spice combine.
2. Saute the onion until gently suntanned, then add the chicken body, beside the remainder of the ingredients. Add the water, wake up a boil, skim off any scum that rises to the highest, then let simmer for 2h on an occasional heat.
