How To Make Lumpia (Make a Dish Indonesia)  - The Chinese word "Pia" refers to cake or snack, while "loan" or "lun" means roll, aptly describing the source of influence for this popular snack. The fillings of Lunpia consist of bamboo shoots, dried shrimp, firm yellow tofu, shrimp and eggs. Almost all are halal, without the exception of some vendors who prefer using lard. Served as is or deep-fried, the snack is usually served with a thick sweat and sour sauce, Chinese chive and sweet cucumber pickles.

INGREDIENTS (Serves 10 -12): 1 Pieces = 145 Calories
  • Cooking oil
  • 3 pcs eggs, scrambled
  • 200 grams peeled shrimp, cut into halves
  • 250 grams boneless chicken breast, cut by ½ cm
  • 1 ½ teaspoons dried shrimps, toasted and ground
  • 500 grams bamboo shoots, boiled and julienned
  • ¼ - ½ teaspoons salt
  • ½ teaspoons sugar
  • ¾ - 1teaspoons pepper
  • 8-9 pcs garlic cloves, minced
  • 10 - 12 sheet spring roll wrappers (18 cm diameter)
  • Egg whites
BAMBOO SHOOTS SPICES (mix together)
  • 2 ½ - 3 tablespoons soy sauce
  • 2 ½ - 3 tablespoons sweet soy sauce
  • 250-300 cc chicken broth
  • ¾ - 1 teaspoons pepper
  • 1 ½ teaspoons sugar
  • ½ teaspoons salt
THICK/TAPIOCA STARCH SAUCE:
  • 1 ½ teaspoons sweet soy sauce
  • 1- 1 ½ teaspoons sugar (to taste)
  • 2 ½ - 3 tablespoons tapioca starch
  • 300 cc water
GARLIC SAUCE (mix these ingredients then combine with the thick sauce):
  • 5-6 pcs garlic cloves, minced
  • ¾ - 1 teaspoons sugar
  • ½ teaspoons salt
  • 1 ½ tablespoons boiled water
  • 1 ¼ - 1 ½ teaspoons vinegar
GARNISH:
  • Chivess
  • Cucumber-and-chili pickles
DIRECTIONS:
  1. Sautee shrimp and chicken for about five minutes, add salt, sugar and pepper. Remove.
  2. Heat 3 tablespoons of oil, sauté the minced garlic. Add the bamboo shots, bamboo shoots spices, chicken and shrimp. Cook until dry. Add the dried shrimp, stir well. Add the scrambled egg last. Stir well, and then remove.
  3. Baste the wrappers with a little thick sauce. Place 3-4 tablespoons of the filling on the wrappers. Fold and roll. Glue with egg whites.
The lunpias can be served immediately, as they are, or deep-fried. Serve with the complementing side dishes of thick sauce and garlic sauce, chives and pickles.

How To Make Tahu Telur (Make a Dish Indonesia)  - This all-time East Javanese comfort food is prepared by dipping dice-shaped white tofu in whisked egg, to be followed by deep¬ frying. It is then placed on a bed of steamed bean sprouts, sprinkled with celery cuts, and showered with peanut-based sauce. For good measure, fans add sweet soy sauce and fried shallots. In Surabaya, some sellers add a little shrimp paste to enrich the flavor. Condiments usually include cucumber pickles and colorful tapioca crackers.

INGREDIENTS (serves 6 - 8): 1 Portion = 471 calories
  • 400 grams tofu
  • 8 eggs, scrambled
  • ¾ teaspoons pepper
  • ¾ teaspoons salt
  • Cooking oil
PEANUT SAUCE:
  • 5-6 pcs bird's eye chilies, fried
  • 2 pcs red chilies, fried
  • 4 cloves garlic cloves, fried
  • 2 tablespoons peanuts, fried
  • 1 ½ teaspoons palm sugar, thinly sliced
  • 2-3 tablespoons dark shrimp paste
  • ½ teaspoon salt
  • 2 tablespoons sweet soy sauce
  • 100 cc water
GARNISH:
  • 150 grams cucumber, deseeded, cut in dices by the size of 1cm
  • 200 grams bean sprouts, roots removed. Place the bean sprouts in boiling water for less than one minute, then drain them
  • 4 tablespoons fried shallots
  • 2-3 celery stalks, thinly sliced
DIRECTIONS:
  1. Cut tofu in dices of 1 ½ cm. Fry it until half-cooked, remove and sat aside. Divide the tofu into 6-8 servings. Mix one part of tofu with one part of the scrambled egg.
  2. Heat cooking oil in wok, place one part of tofu, round-shaped. Fry until well cooked. Remove and drain. Repeat the same process to the remaining tofu. Add more cooking oil, if necessary..
  3. Peanut sauce: Blend well garlic and chilies. Add the fried peanuts, continue grinding. Add the dark shrimp paste, salt, sweet soy sauce and palm sugar. Thin it out with water, mix well.
  4. Prepare the egg tofu on a plate, scatter bean sprouts and cucumber on top. Pour the peanut sauce on top, sprinkle with fried shallots and celery. Serve immediately.
